Besan ke Altay Paltay Recipe

As the name suggests, this unique dish is prepared with gram flour along with particular spices. You can either enjoy it with rice or just eat with a spoon. Your choice!

  • Gram flour 1 Cup
  • Red chili powder ½ Tsp
  • Turmeric powder ½ Tsp
  • Whole spice powder ½ Tsp
  • Chaat masala ½ Tsp
  • Salt ½ Tsp
  • Water 1 Cup
  • Oil 1 Tbsp
  • Green chili Chopped
  • Coriander Chopped
  • Oil ¼ Cup
  • Fenugreek seeds ½ Tsp
  • Pyaz Chopped medium 1 Pc
  • Ginger garlic paste 1 Tsp
  • Coriander powder 1½ Tsp
  • Red chili powder 1 Tsp
  • Turmeric powder ½ Tsp
  • Yogurt ¾ Cup
  • Fried onion Crushed 1 Tbsp
  • Water 1 Cup
  • Green chilies 1-2 Pcs
  • Coriander chopped 1-2 Tbsp
  • Whole spice powder ½ Tsp


  1. Take a bowl mix together gram flour with red chilli powder, turmeric powder, whole spice powder, chaat masala, salt and water
  2. Now add oil and mix well then set it aside for 15-20 minutes
  3. Pour the batter on a non sticky pan and sprinkle some green chilli powder and coriander
  4. Fold and press the cooked batter and cook until light brown then set it aside as well
  5. Now cut all the besan altay paltay in the desired shapes with a knife
  6. Take a wok and fry the onion paste in oil along with meethi daana for 1-2 minutes
  7. Next saute the ginger-garlic paste with salt, coriander powder, red chilli powder, turmeric powder for 1-2 minutes
  8. Add the yogurt and mix it well until the water is evaporated
  9. Then add fried onion with water and mix well
  10. Add the altay paltay along with green chillies, whole spice powder and coriander
  11. Cover and simmer them all for 1-2 minutes before serving
  12. Garnish with green chillies and coriander leaves and enjoy
