Ingredient For Biryani Masala

  1. Cumin seeds 1 tbsp
  2. Cinnamon 2 sticks
  3. Black cardamom 1
  4. Black peppercorns ½ Tsp
  5. Green cardamom 3 to 4
  6. Cloves ½ Tsp
  7. Nutmeg ½ inch piece
  8. Star anise 1
  9. Caraway seeds ½ Tsp
  10. Mace ½ Tsp
  11. Salt 1 & ½ tsp or to taste
  12. Cloves 3 to 4
  13. Black cardamom 1
  14. Black peppercorns 6 to 8
  15. Cumins seeds ½ Tsp
  16. Dried plums 4 to 5
  17. Turmeric powder 2 Tsp
  18. Cinnamon stick 1 to 2
  19. Green cardamom 2
  20. Bay leaf 1
  21. Red chili powder 1 Tbsp

Ingredients For Green Chili Paste

  1. Green chilies 12 to 15
  2. Water as required

Rice Ingredients

  1. Water as required
  2. Whole spice 1 tbs
  3. Salt 2 tbsp
  4. Mint leaves 20 to 25
  5. Basmati rice soaked ½ kg

Gravy Ingredients

  1. Cooking oil or Ghee ½ cup
  2. Chicken ½ kg
  3. Ginger garlic paste 1 tbsp
  4. Green chili paste 2 tbsp
  5. Biryani masala
  6. Yogurt 4 tbsp
  7. Water 1 & ½ cup

Layering Ingredients Level

  1. Red Onions Fried 1 cup
  2. Tomatoes Sliced 2
  3. Mint leaves handful
  4. Green coriander handful
  5. Green chili  3 to 4
  6. Yogurt 1 cup
  7. Yellow Food color 2 to 3 pinch
  8. Rice Boiled
  9. Food color 2 to 3 pinch
  10. Red Onion Fried
  11. Mint handful
  12. Green coriander handful
  13. Potatoes Boiled with salt and food color Optional

Directions For Biryani Masala

  1. Take a spice mill, and add cumin seeds, cinnamon stick, black cardamom, black peppercorns, green cardamom, cloves, nutmeg, star anise, black cumin, and mace, and grind them to make a coarse powder for biryani.
  2. Now, In the grinded powder, add salt, cloves, black cardamom, black peppercorns, cumin seeds, dried plums, turmeric powder, cinnamon stick, green cardamom, bay leaf, red chili powder and mix them well and Your Biryani masala is ready.

Directions For Green chili paste

  1. Take a grinder, add green chilies and water, grind them and set aside.

Directions For Rice

  1. Take a pot, and add water, bring it to boil and add all whole spice, salt, and mint leaves.
  2. Add basmati rice soaked, mix it and boil till ¾ the done, strain and set aside.

Directions For Gravy

  1. Take a pot, and add ghee, let it melt, and then add chicken and cook until the color changes.
  2. Now, Add ginger garlic paste and saute them little.
  3. Now add green chili paste, and mix it well with above ingredients and fry for 1 to 2 minutes.
  4. Now, Add biryani masala and yogurt, mix them well until the oil is separate, and then add water and bring it to boil.
  5. Now, Cover and cook all the ingredients until ½ cup gravy remains.

Directions For Biryani Layering

  1. First in gravy, add fried onion, tomato, mint leaves, green coriander, green chili, yogurt, food color, boiled rice, food color, fried onion, mint, green coriander, potatoes, cover and cook them on low flame for 10 to 12 minutes and you Biryani is ready to serve.
