Ingredients for Beef/Mutton Stock

  1. Soup bones ½ kg
  2. Water 1 liter

Ingredients for Qorma

  1. Cooking Oil ¼ Cup
  2. Onion sliced 2 large
  3. Ginger garlic paste 2 & ½ tbs
  4. Red chili powder 2 tbsp
  5. Turmeric powder 1 tbsp
  6. Salt 1 tbsp
  7. Bay leaves 2 large
  8. Cinnamon sticks 2
  9. Cloves 4-5
  10. Black peppercorns 8-10
  11. Water 2-3 tbsp
  12. Mutton/Beef boneless meat ½ kg
  13. Water 1 liter

Ingredients for Lentils mixture

  1. Wheat ½ Cup soaked overnight
  2. Barley ½ Cup soaked overnight
  3. Split Bengal gram ½ Cup soaked overnight
  4. Split orange lentil ¼ Cup soaked overnight
  5. White lentil ¼ Cup soaked overnight
  6. Split yellow lentil ¼ Cup soaked overnight
  7. Water 2 liter
  8. Bay leaves 2 large
  9. Turmeric powder 2 tsp
  10. Salt 1 tbsp
  11. Water 1 liter
  12. Mace powder ½ Tsp
  13. Nutmeg powder ½ Tsp
  14. Cumin powder 1 tbsp
  15. Water ½ Cup
  16. Chickpea powder roasted 1 tbs
  17. Ginger julienne
  18. Green chilies chopped 1-2
  19. Mint leaves handful

Ingredients for Tadka

  1. Cooking Oil ¼ Cup
  2. Onion slices 1 large

Directions For Beef/Mutton stock

  1. Take a pot, add soup bones, water and mix them well, bring it to boil, cover and cook on low flame for 40 to 45 minutes.
  2. Strain the stock, and discard bones then set aside.

Directions For Qorma

  1. In a pot, add cooking oil, red onion and fry until brown.
  2. Now, Add ginger garlic paste and mix them well, and add red chili powder, turmeric powder, salt, bay leaves, cinnamon stick, cloves, black peppercorns and mix them well.
  3. Now, Add water and mix well, add mutton/beef boneless meat and mix them well for 2 to 3 minutes.
  4. Now, Add water, mix them well and bring it to boil, cover them and cook until meat is tender approximately 1 hour.
  5. Now, Remove bay leaves and mash/shred meat and set aside.

Directions for For Lentils mixture

  1. First, take a pot, barley, add wheat, split orange lentil, white lentil, split yellow lentil, water, bay leaves, split Bengal gram, turmeric powder, salt and mix these ingredients well, bring it to boil, cover and cook them on low flame until lentils are tender approximately 1 hour.
  2. Now, Remove bay leaves and blend the whole mixture with a hand blender.
  3. Now, Add prepared beef stock and mix them well.
  4. Now, Add shredded meat and mix all ingredients well.
  5. Add water and mix with ingredients well.
  6. Now, Add mace powder, nutmeg powder, cumin powder and mix all the ingredients well.
  7. Now, In water, add chickpea powder and mix this ingredient well.
  8. Now add this mixture in daleem, and mix well and cook for 5 to 6 minutes.
  9. Now, Add ginger, green chilies, and mint leaves, and mix them well.

Directions For Tadka

  1. Take a frying pan, add cooking oil and red onion, fry them until their color become golden brown.
  2. Now, Add fried red onion in daleem and serve this recipe with Naan, Bread, or Chapati.
