Pani Puri (Gol Gappay) Recipe

It is often called by two names Pani Puri and Gol gappay. The regular spicy cravings will come to an end once you learn to make pani puri at home. Check out the recipe for making the pani puri water, pani puri masala,mithi chutni and green chutni along with pani puri ofcourse!

Pani Puri (Gol Gappay) Recipe With Ingredients and Directions:

Ingredients for Meethi Chutney:

  • Gur (Jaggery) ½ Cup
  • Khajoor (Soft dates) (Deseeded) 4-5 Pcs
  • Paani (Water) as required
  • Chaat masala ½ Tsp
  • Sonth (Dry ginger powder) ½ Tsp
  • Paani (Water) as required
  • Namak (Salt) 1 Pinch

Ingredients for  Green Chutney:

  • Hari mirch (Green chilies) 5-6 Pcs
  • Hara dhaniya (Green coriander) ½ Bunch
  • Podina (Mint leaves) ½ Bunch
  • Paani (Water) as required

Ingredients for Gol Gappay Water:

  • Paani (Water) 5 Cups
  • Imli (Tamarind) 1 Cup (Soak in 1 cup water)
  • Ajwain (Carom seeds) ½ Tsp
  • Chaat masala 1 Tsp
  • Namak (Salt) ½ Tsp
  • Kala namak (Black salt) 1 Tsp
  • Sonth (Dry ginger powder) ½ Tsp
  • Lal mirch powder (Red chili powder) 1 Tsp

 

Ingredients for Dough:

  • Sooji (Semolina) 1 cup
  • Maida (All-purpose flour) 2 tbs
  • Namak (Salt) ½ tsp or to taste
  • Paani (Water) as required
  • Oil for frying

Directions For Green Chutney:

  • Blend the green chillies in water along with green coriander, mint leaves until they are combined very well
  • Set it aside in a bowl as the green chutney is ready

Directions For Meethi Chutney:

  • Take a frying pan and add jaggery, dates and water while mixing them until they are dissolved and form a paste
  • Now add the chaat masala and dry ginger powder and salt in the mixture and set it aside in a bowl

Directions For Gol Gappay Water:

  • Take a pot and add water with tamarind pulp, salt, black salt, ginger powder, carom seeds, chaat masala and red chili powder while boiling mixing it
  • Strain the mixture and set it aside to cool it down

Directions For Puri Dough:

  • Take a bowl and add semolina with all purpose flour along with salt and water
  • Mix and knead to form a smooth dough
  • Cover the dough with a moist cloth for about half an hour
  • Now knead it again for 5 minutes until it becomes smooth and divide the dough into two parts
  • Grease the working surface with oil and roll the dough ball into flat round circle while using a rolling pin
  • Cut it into round shapes with the help of a cutter not more than 2 inches (standard puri size)
  • Again use the damp cloth for covering the puris now
  • Heat oil in a frying pan and fry the puris on low flame, press them slightly then flip side
  • Fry until crispy and golden

Directions For Serving Pani Puri:

  • Poke a small hole in the centre of each puri which is now a gol gappa
  • Add some boiled chickpeas and boiled potato cubes in the hole
  • Also add a little meethi chutney and green chutney with yogurt
  • Then sprinkle some finely chopped onion with sev nimco and coat it with some meethi chutney, green chutney, yogurt and some chaat masala
  • Dip the puris into the spicy water and devour as a whole bite
  • Enjoy the perfect blend of crispy roadside vendor flavours
