Ingredients for Sindhi Biryani

  1. Cooking Oil ½ Cup
  2. Red Onion sliced 3 medium
  3. Ginger garlic paste 1 tbsp
  4. Chicken ½ kg
  5. Black peppercorns 8 to 9
  6. Star anise 1
  7. Cinnamon sticks 2
  8. Cloves 4 to 5
  9. Black cardamom 1
  10. Green cardamom 4
  11. Cumin seeds 1 tsp
  12. Red chili powder 1 & ½ tsp or to taste
  13. Turmeric powder ½ tsp
  14. Garam masala powder 1 tsp
  15. Cumin powder 1 tsp
  16. Coriander powder 1 tsp
  17. Salt 1 & ½ tsp or to taste
  18. Bay leaf 1
  19. Yogurt ¾ Cup
  20. Tomatoes cubes 3 medium
  21. Green chilies 4 to 5
  22. Plums 5 to 6
  23. Green coriander handful
  24. Mint leaves handful
  25. lemon juice 2 tbs
  26. Rice ½ kg (soaked and boiled with whole spices & salt)
  27. Potatoes boiled 2 to 3
  28. Red chopped Onion fried
  29. Lemon juice 2 tbs
  30. Remaining cooked rice
  31. Water 1-2 tbs
  32. Yellow food color ½ tsp

Directions

  1. Take a pot, add oil, onion and fry them until their color become golden brown,take out half quantity of fried onion & set aside.
  2. Now, In remaining fried red onion, add ginger garlic paste and mix them well.
  3. Now, Add chicken and fry until the chicken color changes.
  4. Now, Add black peppercorns, star anise, cinnamon stick, cloves, black cardamom, green cardamom, cumin seeds, red chili powder, turmeric powder, garam masala powder, cumin powder, coriander powder, salt, bay leaf and yogurt, and mix them well & cook for 4-5 minutes.
  5. Now, Add chopped tomatoes and mix them well.
  6. Now, Add green chilies, plums, green coriander, mint leaves and mix them well, then cover and cook for 6 to 8 minutes.
  7. Now, Take out half quantity of cooked chicken and gravy and set aside, add lemon juice,cooked rice, boiled potatoes, remaining cooked chicken, fried onion, lemon juice, remaining cooked rice, water, yellow food color, fried onion and drizzle oil, cover and steam cook for 10 minutes.
