Ingredients To Prepare Green Marinade

  1. Coriander 3/4 Cup
  2. Green chilies 10 to 15
  3. Mint leaves ½ Cup
  4. Dahi 1/3 Cup
  5. Tetra pack cream 3 tbsp
  6. Ginger garlic paste 1 tbsp
  7. Black pepper powder 1 Tsp
  8. Whole spice powder ½ Tsp
  9. Salt 1 & ½ Tsp

Ingredients For Spatchcock Chicken

  1. Whole chicken with skin 2 kg
  2. Butter 1 tbs
  3. Cooking Oil 1 tbsp
  4. Coal for smoke

Ingredients For Caramelized Onion

  1. Butter 1 tbsp
  2. Cooking Oil 1 Tsp
  3. Onion rings 2
  4. Salt 1 to 2 pinch
  5. Brown Sugar 1 tbsp

Directions To Prepare Green Marinade

  1. Take a blender, add coriander, green chilies, mint leaves and blend all these ingredients well.
  2. Now, take a bowl, add yogurt, ginger garlic paste, tetra pack cream, whole spice powder, black pepper powder, salt, greens and mix them well.

Directions For Whole Green Chicken Recipe

  1. First, Wash and pat dry whole chicken and Cut tips of the wings.
  2. Now, Upside down chicken and pat dry again.
  3. Now, Cut the whole chicken with kitchen scissors, cut the backbone of the chicken and break breastbone with the knife and flatten it.
  4. Now, Transfer the chicken to the dish, add green marinade and spread evenly, marinate the whole chicken for 4 hours.
  5. Now, Heat griddle, add butter, Cooking oil and marinated chicken, place aluminum foil and put a heavy pan on chicken and cook on low flame for 20 minutes from both sides.
  6. Now, Remove weight, apply marinade and turn the chicken, again apply marinade.
  7. Now, Turn the chicken and cook for another 20 minutes until the chicken is done.
  8. Now, Give a coal smoke for 1 to 2 minutes.

Directions For Caramelized Onion

  1. Take, a frying pan, add butter, oil, onion rings and mix them well.
  2. Now, Add salt, brown sugar and cook them on low flame until the onions are translucent brown and keep stirring in between.

Note For The Recipe

  1. You can bake the whole green chicken in the preheated oven at 180C temperature for 1 hour and 15 minutes.
  2. Grill or steam cook at low flame heat until it is done.
