Tomato Basil Soup

  Ingredients:

  • 4 cups ripe tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh basil leaves
  • 1/2 cup heavy cream
  • Salt and pepper to taste 
How to Make It:
  1. Sauté onions and garlic in a pot until fragrant.
  2. Add tomatoes and cook until they break down.
  3. Pour in vegetable broth and simmer for 20 minutes.
  4. Blend the soup until smooth, then stir in cream and basil.
  5. Season with salt and pepper, and serve hot.
