Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp coriander
- Salt and pepper to taste
- Fresh cilantro for garnish
- Sauté onions, carrots, and celery until soft.
- Add lentils, broth, and spices, then bring to a boil.
- Reduce heat and simmer for 30 minutes until lentils are tender.
- Season with salt and pepper, garnish with cilantro, and serve.
