Minestrone Soup


Overview: 

A hearty Italian vegetable soup filled with pasta, beans, and seasonal vegetables.

 Ingredients:

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can cannellini beans, drained
  • 1 cup small pasta
  • Salt and pepper to taste
  • Fresh basil for garnish 
How to Make It:
  1. Sauté onions, garlic, carrots, and celery until soft.
  2. Add zucchini, green beans, tomatoes, and vegetable broth, bring to a boil.
  3. Stir in pasta and beans, cook until pasta is tender.
  4. Season with salt and pepper, garnish with basil, and serve.
