Overview:
A fragrant Vietnamese soup made with broth, rice noodles, and various herbs, typically served with beef or chicken.

Ingredients:
- 1 lb beef or chicken, thinly sliced
- 4 cups beef or chicken broth
- 8 oz rice noodles
- 1 onion, sliced
- 2 cloves garlic, minced
- 2-inch piece of ginger, sliced
- 1 cinnamon stick
- 2 star anise
- 2 tbsp fish sauce
- Fresh basil, cilantro, lime, and bean sprouts for garnish
- Toast cinnamon, star anise, garlic, and ginger in a pot until fragrant.
- Add broth and bring to a simmer for 30 minutes.
- Cook rice noodles according to package instructions.
- Strain the broth, then add thinly sliced beef or chicken to the hot broth to cook.
- Serve the broth over noodles, garnished with fresh herbs, lime, and bean sprouts.
