Ingredients:

  • 4 bell peppers, tops removed and seeds cleaned
  • 1 cup cooked quinoa

  • 1/2 teaspoon chili powder
  • Shredded cheese (optional)

Instructions:

  1. Mix the quinoa, black beans, corn, tomato sauce, cumin, and chili powder.
  2. Stuff the mixture into the bell peppers.
  3. Bake at 375°F (190°C) for 25-30 minutes.
